Miguel Carretero (1991) from Pedro Muñoz (Ciudad Real) opens Santerra in 2017 in the heart of the Salamanca district of Madrid.
Basing the menu on a cuisine of products and technique, changing every season, interpreting dishes with a traditional soul and contemporary character.

Michelin Star 2024, champion in 2018 of the award for the "Best Croquette in the World" at Madrid Fusión, reaffirming the title of "The croquette champion of champions" at Madrid Fusión in 2022, also of the National Pickle Competition at Madrid Fusión 2020 and with a Repsol Sun under his arm since 2021.
